Quenching.

Rapid cooling from high temperature generally by immersion in a liquid bath of oil or water, but molten salt or metal may be used. The object is to reduce  the temperature of a metal rapidly and thus suppress a phase transformation. It is commonly used to harden steel, but austenitic steel may be quenched to prevent carbide precipitation and quenching after tempering is used to prevent temper brittleness.
